I was too lazy to look back and see if i have posted about this ever so easy scone mixture that never fails ...(all my friends ask how I make my scones so light and fluffy).....so if i have posted it here and if you already have this recipe...you might want to revisit it for afternoon tea one day this week...or just keep on scrolling by....
We had a funeral yesterday of a dear friend and i was asked to take some morning tea...what else do you take for morning teas of course????...scones and homemade raspberry jam and cream!!!!
So while i was whipping this little lot up i thought i would share the recipe that was given to me by a friend who passed away many years ago and has been a favorite in our family...i am sure my girls use it and will pass it on as a family favorite for them to.
it is just so easy.... The Recipe.....
3 heaped cups of Self Raising flour (i sift this a couple of times. )
1 cup of real cream (not thickened cream)
1 cup of lemonade
(to make a sweet scone add a tablespoon on caster sugar... you can add sultanas, or cheese and parsley etc)
yep that is all it is......
mix all these three ingredient s together with a knife
turn the mixture out and FOLD it together, pushing it into a square shape,
cut into squares with a sharp knife.
TIP..... touch the mixture as little as possible...
brush the top of the scones with milk and bake on 200oC for 12 minutes...

you will noticed i used sugar free lemonade ... it was all i had in the fridge...still worked fine....
i know ...no butter ans rubbing in ...but it works and they are yum and rise up heaps..so much so that they fall over like the leaning Tower of Pisa....

Wow! So easy. Doyou know that American lemonade is different to Aussie lemonade- i guess here we'd have to use sprite. Now, if only my oven was working....
