Banana Cake...food processor

So you have no time and in the fruit bowl looking at you are two large yucky looking bananas that the kids won't eat no matter that they are still firm inside, and you hate wasting them to the compost bin.....no guilt trips..here's a recipe that takes just a couple of minutes to whip up..

This is what you end up with...and it freezes so well (without the icing of course...)
it is also nice as a warm sweet if you have run out of ideas... don't ice it and serve with whipped cream and mashed banana heated...wickedly scrumptious....

Once i used to be able to remember the recipes in my head ...note i said ONCE...now i have this book..heaven forbid if i ever misplace it..perhaps this is why i am sharing my recipes ..they will never be lost if you adopt them as your favorites too....

It really does work so well in a ring pan...havent tried it in an ordinary round pan... very moist and keeps for a week or more (thats if it lasts that long)


turned out and ready to ice....
Food Processor Banana Cake
1 cup of caster sugar
1/4 cup brown sugar
1 large cup of mashed banana(about 2 large ones)
125grms(4 ozs) softened butter
3 eggs
3/4 cup (6fuid ozs) sour cream
Place all in the food processor and buzz till smooth
pour into large bowl
ADD
1 3/4 cups of SR flour(i add 1/2 teaspoon of cinnamon or nutmeg here too)
stir together with a metal spoon until smooth
spoon into ring pan
BAKE
On 180c for about 40 mins (or until tester comes out cleanly)
ice with Lemon icing
Lemon Icing
1 table spoon of lemon juice
1 1/2 cups icing sugar (more if needed)
1 desert spoon of butter
Blend together and ice the cake
Yummo..... enjoy

  3. oooh, that looks delicious. will definitely be having a cook of it soon. i should have made it today actually...we had 3 brownish bananas in the fruit bowl and i made the kids eat them. lil didn't care but oscar said it was all squishy and wouldn't have a bar of it...so i mashed it up and put it on a folded over piece of bread and forced him to eat it!! poor little man, what a mean mum! but he said he wanted a banana and i didn't want him to let it go to waste! the cake would have been a MUCH friendlier option ;)
