Date Loaf...old fashioned and easy



My very easy date and ginger loaf
This is what you need....
1 cup of dates (roughly chopped)
1 cup of dark brown sugar
1 heaped tablespoon of butter
1 cup of boiling water
1 3/4 cups of SR Flour
1 level teaspoon of bicarb of soda
2 teaspoons of vanilla essence
1 tablespoon of preserved ginger (cut up)...optional
Method
Place roughly chopped dates in a bowl, add sugar, butter and boiling water...stir till sugar and butter dissolve and cool slightly...add all other ingredients sir till all mixed..it will start to "puff" slightly (sort of like yeast)
place in loaf tin and bake in 180 C oven for around 45 mins
Variations
if you don't like ginger leave in out ...just make plain date loaf (or add some nuts.....pecan works well)
use mixed fruit...
try dried apricots and sultanas...that is great..
just spread a slice with real butter and YUMMO
This is a great loaf for kids lunches ...no eggs either...so for egg allergy this is a good one....
you can freeze it well........good luck with that one.....it never lasts that long in this house!!!!!

now i am showing you three times the recipe here...you can do that and it still works great....i always make big loaves in my antique bread tins....

cooling...well ..trying to before HE smells them and comes following his nose.....


OOWWW yum...this was still hot when HE cut a slice to eat.....
