CHICKEN PIE IN A JIFFY...YEP AS EASY AS PIE...HE HE HE!!!!!!
This is just too easy for words girls...
you don't even have to make your own pastry...but i did and here is the easy recipe...
1 cup SR flour
1 cup plain flour
2 oz butter
pinch of salt and a shake of grated parmesan cheese.
Pop all this in the food processor and bind the butter into the flour
then add just enough cold water (about 1/2 cup or a bit more) to bind it all together
Take out of the food processor and wrap in glad wrap and place int he fridge while you get the pie filling ready.
halve the mixture and roll out two pieces to fit the dish you have chosen
blind bake the base for 10 mins. (allow this to cool a little while you make the filling)

The filling....
1 BBQ chiken...(yep!!!! ..already cooked for you)
break the chicken into pieces
strip the skin and bones off and place then in a pot or MWproof bowl
cover with water
add 1 small onion chopped
1 grated carrot
2 sticks of Celery chopped
i potato grated
bring to the boil and cook (about 4 mins in mw)
take bones and skin from pot leaving the vegies in...
thicken with gravox
add pepper, some fresh chopped parsley and chopped spring onion now any seasoning you fancy
allow to cool while you are rolling out your pastry...
now add the filling and place the pastry on top of the filling
bake at 200o C until the pastry is browning and ready...
Now just enjoy....

ReplyDeleteSo perfect! Though the internet is full of Pie recipes and tricks it is difficult to achieve what I think as the PEFECT PIE! Yours is, crunchy on the outside and moist on the content.

(I can't seem to post without just replying to a comment from someone else, so forgive me) I went to my dad's yesterday and he had to show me this recipe. He is so excited to try it and told me as he read the recipe he could hear you saying all of it to him. :) He better not forget to call me when he makes it! Yum!
