OK OK you win ...yes here is the recipe
(i have been making this for lots and lots of years and my girls will tell you it is a big favorite and it never lasts long in our house (even with just Kelv here to eat it)and i don't remember where i got the recipe from but i know for sure that it has made the rounds of a lots of primary school cooking classes(just ask Collette!!!)
Nettie's Basic Fudge Recipe
500 grams of Nestle chocolate melts ...milk, dark or white
1 can of Nestle Condensed milk
Place in microwave on high for 2-4 minutes(depending on the wattage of your MW).... until the chocolate has melted and can mix to a smooth consistency
(this will set if you just want basic chocolate fudge )
but to make it more interesting ADD....
then add
1 cup of unsalted nuts.....
(...i use macadamia and Brazil or pecan and and almond...but you use your favorite mix)
Place back in microwave on high for a further 2 minutes after stirring in the nuts(or whatever you are adding)
Pour into a foil or baking paper lined shallow tray ...refrigerate until cool....cut into bite size squares and i dare you not to eat at least 6.......
Now for Variations
use dark compound chocolate and a 125grm packet of glace ginger..(if you like ginger you can double it)or maraschino or glace cherries chopped.
I also buy any chocolate bars when they are on sale(use 375 grms of chocolate if you add choc late bars ... and add two of each bars ....eg 2x peppermint crips, or 2x cherry ripe, or 2x large mars bars,2x or crunchy bars etc etc...(we have a dollars type store here called Chicken feed and it is great for having specials on sweets.
Then there is adding jube type sweets like raspberries, jelly babies, gummy bears etc...all chopped up of course...and if you use the red and green ones at Christmas it looks awesome in white chocolate.
Now for fruit fudge
one cup of your favorite fruit mix...like the fruit medley with apple, apricot, pear, mango ..cut up smaller of course.
Sultanas and raisins that have been steeped overnight in a little apricot nectar with some rum or brandy essence over (the mixture must still be quite dry..so pat out any excess fluid with a paper towel before adding to the chocolate mixture...you will find it will probably all have absorbed anyway)
1 cup of Shredded coconut and a teaspoon of coconut essence to make coconut rough
1 teaspoon of peppermint essence to make a peppermint fudge
If you are really quick or you have a few extra helping hands and the day is warm you can turn the mixture into truffle like fudge balls or logs and roll them in cocoa and icing sugar or shredded coconut or crushed nuts or almond meal or even milo..... or crushed tim tam biscuits..... etc yum etc yum
Ok see if you can think of any more .....or just create your own family favorite...so good for the kids to have fun helping.... let me know your favorite way of making this fudge recipe that everyone of your friends will think you have spent hours slaving in the kitchen over when you serve it as after dinner mints at the dinner party.....plus the school fair is no longer a hassle with this recipe .....every year is a different thing ...even though it is the same recipe....ENJOY
Yummy. I will have to track down some condensed milk and get the kids to make this over the break. Not good for my diet though, ho hum
ReplyDeleteI think it is funny the way recipes take on people's names. In my recipe book that one days "Aunty Chris's fudge"!!!! But I guess if you make it the most you can claim it!!!!! It's a goodun!
